2023 Whole-Cluster Gamay Noir

Spice, black pepper, violet, and blackberry aromas with a fresh and lively mid-weight palate reflecting the low alcohol and whole-cluster fermentation of this Gamay. Enjoy with chicken, roasted eggplant or your favorite cheese.
Production notes
The grapes were hand harvested on Oct 13 from the organically farmed Escolle Vineyard and were gently sorted into a fermentation bin. Foot trotting for the first few days allowed for the native fermentation to get established and completed after 14 days. Once nearly dry, the wine was gently basket pressed and racked to neutral French oak where it aged for the next 10 months - bottling in Aug 2024.
