2023 Whole-Cluster Pinot Noir
Tasting notes
Strawberry pie, cardamom spice, forest floor, and graphite on the nose with beautiful structure and mid-palate lift from the 1-year old French oak barrels. Enjoy with BBQ dishes, spicy Asian foods, salmon or a holiday meal.
Production notes
The grapes were hand harvested on Oct 10 from the organically farmed Pelio Vineyard and were gently sorted into a fermentation bin. Foot trotting for the first few days allowed for the native fermentation to get established and completed after 15 days. Once dry, the wine was gently basket pressed and racked to 1 year-old French oak where it aged for the next 10 months - bottling in Aug 2024.
