2023 Cabernet Franc
Tasting notes
Black cherry, cassis, crushed rock, graphite, dried herbs and tobacco aromas with a wonderful rich mouthfeel and juicy tannins.
Production notes
The grapes were hand harvested on Oct 10 from the organically farmed Massa Estate and were gently sorted into a fermentation bin (50% was left whole-cluster and the balance was de-stemmed). Hand punch downs on the bin took place 1-2 times daily and native yeast converted all sugar to alcohol. Once dry, the wine was gently basket pressed and racked to neutral French oak where it sat for the next 10 months - bottling in Aug. 2024.
